🛒 Ingredients (Makes about 9 biscuits):

  • 2½ cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp salt

  • ½ cup (1 stick) unsalted butter, very cold and cut into small cubes

  • ¾–1 cup cold buttermilk (or milk + 1 tsp lemon juice or vinegar)

  • 2 tbsp melted butter, for brushing

1. Preheat Oven:

  • Preheat to 425°F (220°C).

  • Line a baking sheet with parchment paper.

2. Mix Dry Ingredients:

  • In a large bowl, whisk together flour, baking powder, salt, and sugar.

3. Cut in the Butter:

  • Add cold butter cubes to the dry mixture.

  • Use a pastry cutter or your fingertips to work the butter into pea-sized crumbs.
    (Cold chunks of butter are key for flaky layers!)

4. Add the Buttermilk:

  • Pour in ¾ cup of cold buttermilk.

  • Stir gently with a fork until the dough just comes together.

  • If too dry, add a tablespoon or two more buttermilk.

5. Shape the Dough:

  • Turn dough out onto a floured surface.

  • Gently pat or roll into a rectangle about ¾–1 inch thick.

  • Fold it in half, then gently pat out again — do this 2–3 times for beautiful flaky layers.

  • Finally, shape into a 6×6-inch square and cut into 9 square biscuits with a sharp knife.
    (No twisting like with round cutters — that seals the edges.)

6. Bake:

  • Place biscuits on the baking sheet, close together for soft sides or spaced apart for crispier edges.

  • Brush tops with melted butter.

  • Bake 14–18 minutes, until tall and golden brown.

7. Finish:

  • Brush with a little more melted butter right out of the oven.

  • Serve warm — preferably with more butter, honey, or jam. 😋
