Instructions

1. Cook the Bacon

  • In a large skillet or sauté pan over medium heat, cook chopped bacon until crispy.

  • Remove bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.


2. Sauté Onion and Garlic

  • Add diced onion to the pan with bacon fat. Cook 3–4 minutes until translucent.

  • Add minced garlic and cook 1 minute until fragrant.


3. Add the Cabbage

  • Stir in the chopped cabbage.

  • Cook over medium heat, stirring occasionally, until the cabbage is tender and slightly caramelized (about 10–15 minutes).


4. Season and Combine

  • Return the cooked bacon to the pan.

  • Season with salt, pepper, and optional red pepper flakes or smoked paprika.

  • Stir well to combine and heat through.


5. Serve

  • Serve hot as a side dish with pork, chicken, or sausage.

  • Leftovers taste great reheated the next day.

  • For a sweeter flavor, cook cabbage a bit longer until the edges brown slightly.

  • Green cabbage is classic, but you can mix in savoy or red cabbage for color and texture.
