Fried Green Tomatoes
Ingredients
- 3–4 firm green tomatoes, sliced ¼ inch thick
- Salt & black pepper
- ½ cup all-purpose flour
- ½ cup cornmeal (or cornmeal + breadcrumbs 50/50)
- 2 eggs
- ¼ cup milk or buttermilk
- Oil for frying (vegetable, peanut, or canola)
Instructions
- Prep tomatoes
Lightly salt tomato slices and let sit 5 minutes. Pat dry. - Set up dredging station
- Bowl 1: flour
- Bowl 2: eggs + milk
- Bowl 3: cornmeal (season with salt & pepper)
- Coat
Dredge tomatoes in flour → egg → cornmeal. Press coating on. - Fry
Heat ¼ inch oil in a skillet over medium heat (about 350°F / 175°C).
Fry 2–3 minutes per side until golden and crisp. - Drain & serve
Transfer to paper towels. Sprinkle with a little salt while hot.

- Don’t overcrowd the pan
- Keep oil hot but not smoking
- Thicker slices = juicier center
