Fried noodles? Simple, quick, endlessly customizable — and absolutely delicious. 🍜🔥 Whether you’re craving a street food-style snack or a full meal, here’s a basic fried noodles recipe you can adapt to your tastes or pantry.

🍳 Easy Fried Noodles (Stir-Fried Style)

🕒 Ready in: 20 minutes

🍽️ Serves: 2–4

🧂 Ingredients

Base:

  • 8 oz (225 g) egg noodles or lo mein noodles (cooked & drained)

You can also use spaghetti, ramen noodles, or rice noodles.

Sauce (adjust to taste):

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce (adds deep umami flavor)

  • 1 tsp sesame oil

  • ½ tsp sugar

  • Optional: 1 tsp chili paste or sriracha for heat

Aromatics & Stir-Fry:

  • 2 tbsp oil (vegetable or peanut oil)

  • 2–3 cloves garlic, minced

  • ½ small onion, sliced

  • 1 cup vegetables (shredded cabbage, carrots, bell peppers, bean sprouts, etc.)

Optional Add-ins:

  • Scrambled egg

  • Sliced chicken, shrimp, or tofu (pre-cooked or quickly stir-fried before adding noodles)

  • Green onions, chopped (for topping)

👨‍🍳 Instructions

  1. Cook the noodles
Cook according to package instructions, rinse with cold water, and drain. Toss with a bit of oil to prevent sticking.

  2. Prepare the sauce
In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, and chili paste (if using). Set aside.

  3. Heat the wok or pan
Add oil over high heat. Once hot, add garlic and onion — stir-fry for ~30 seconds until fragrant.

  4. Add veggies and/or protein
Stir-fry until just tender (2–3 min). If using pre-cooked meat, toss it in here.

  5. Add noodles and sauce
Add noodles to the pan. Pour sauce over top and toss everything together using tongs or chopsticks. Stir-fry 2–4 minutes until heated through and slightly crispy in spots.

  6. Finish & serve
Top with chopped green onions, sesame seeds, or a drizzle of extra chili oil if you like.

🔁 Variations

  • Thai-style: Add fish sauce and lime juice, use rice noodles

  • Sweet & spicy: Add hoisin sauce and sriracha

  • Crunchy twist: Top with crushed peanuts or fried shallots
