Ingredients

  • 3 tbsp vegetable oil or butter (or a mix)
  • Salt & black pepper to taste
  • Optional: paprika, garlic powder, fresh herbs (thyme, parsley, rosemary)

Instructions

1️⃣ Prep the Potatoes

  1. Slice potatoes thinly (¼-inch) or into small cubes.
  2. Optional: soak slices in cold water 10–15 minutes → removes excess starch → crispier fries.
  3. Pat dry with a towel.

2️⃣ Heat the Pan

  • Use a large skillet over medium heat.
  • Add oil (or butter) and let it heat until shimmering.

3️⃣ Fry the Potatoes

  1. Add potatoes in a single layer. Don’t overcrowd the pan.
  2. Cook 10–15 minutes, stirring occasionally, until edges are golden brown.

4️⃣ Add the Onions

  1. Add sliced onions to the pan with potatoes.
  2. Stir and cook 5–10 minutes until onions are soft and lightly caramelized.

5️⃣ Season & Serve

  • Sprinkle with salt, pepper, and optional herbs or spices.
  • Serve hot as a side dish for eggs, meat, or just on its own!

Tips for Extra Crispiness

  • Use medium-high heat, but don’t burn the oil.
  • Pat potatoes completely dry before frying.
  • Add onions later, so they soften without burning.
  • For extra flavor, finish with a splash of apple cider vinegar or a pinch of smoked paprika.
