Fried potatoes, onions, smoked sausage, and green beans

Here’s a comforting and flavorful one-pan dish: Fried Potatoes, Onions, Smoked Sausage, and Green Beans — a Southern-style skillet meal that’s easy, hearty, and perfect for busy weeknights or lazy weekends.


🥔🧅🥬🌭 Fried Potatoes, Onions, Smoked Sausage & Green Beans Skillet

🧾 Ingredients (Serves 4–6):

  • 4–5 medium russet potatoes, peeled (optional) and diced

  • 1 large onion, sliced or diced

  • 12–16 oz smoked sausage, sliced into rounds (kielbasa or andouille work well)

  • 1 (14.5 oz) can green beans, drained (or 1 ½ cups fresh/steamed green beans)

  • 3–4 tbsp oil or butter (or bacon grease for extra flavor)

  • Salt & black pepper, to taste

  • Optional spices:

    • 1/2 tsp garlic powder

    • 1/2 tsp smoked paprika

    • A dash of red pepper flakes (for heat)

    • Fresh herbs (parsley, thyme, or chives) for garnish


🔪 Instructions:

1. Prep the potatoes:

  • Dice potatoes into small cubes for faster cooking.

  • Rinse and pat dry (removing starch helps them crisp better).

2. Fry the sausage:

  • In a large skillet (cast iron preferred), add 1 tbsp oil over medium-high heat.

  • Sear sliced smoked sausage until browned on both sides (about 4–5 minutes).

  • Remove sausage from pan and set aside.

3. Sauté the onions:

  • In the same skillet, add another tablespoon of oil.

  • Add onions and cook until soft and golden, about 5 minutes. Remove and set aside with sausage.

4. Cook the potatoes:

  • Add remaining oil and the diced potatoes to the skillet.

  • Spread in an even layer and don’t stir too much—let them get crispy.

  • Cook 12–15 minutes, flipping occasionally, until golden and fork-tender.

  • Season with salt, pepper, garlic powder, and paprika.

5. Add green beans, sausage, and onions:

  • Return sausage and onions to the skillet with the potatoes.

  • Add green beans and stir to combine everything.

  • Cook for another 5 minutes, stirring occasionally, until everything is heated through and flavors blend.


🍽️ Serve Hot With:

  • Hot sauce or mustard on the side

  • Cornbread or biscuits

  • A fried egg on top for a breakfast twist

  • Fresh parsley or chopped green onions for a fresh pop


📝 Tips:

  • Want extra smoky flavor? Add a splash of liquid smoke or smoked paprika.

  • Make it spicy with hot sausage or a pinch of cayenne.

  • This dish works great as leftovers — reheat in a skillet for best texture.
