🍤🧄🥦🥔 Garlic Butter Shrimp with Sautéed Veggies & Creamy Mashed Potatoes

🧾 Ingredients (Serves 4):

🍤 For the Garlic Butter Shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 4 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp olive oil

  • Juice of 1 lemon

  • 1 tbsp chopped parsley (fresh)

  • Salt & pepper, to taste

  • Optional: pinch of red pepper flakes or a dash of paprika

🥦 For the Sautéed Veggies:

  • 1 tbsp olive oil or butter

  • 1 cup broccoli florets

  • 1 cup carrot slices (or zucchini, bell pepper, etc.)

  • 1/2 small onion, thinly sliced

  • Salt & pepper, to taste

  • Optional: a squeeze of lemon or sprinkle of garlic powder

🥔 For the Creamy Mashed Potatoes:

  • 2 lbs Yukon gold or russet potatoes, peeled and cubed

  • 1/2 cup heavy cream or plant-based milk

  • 1/4 cup butter (or vegan butter)

  • Salt & pepper, to taste

  • Optional: 2 cloves roasted garlic or 1/4 cup cream cheese for extra richness

🔪 Instructions:

1. Make the Mashed Potatoes:

  • Boil potatoes in salted water for 15–20 minutes until fork-tender.

  • Drain and mash with butter and cream (or milk).

  • Season with salt, pepper, and optional roasted garlic or cream cheese.

  • Cover and keep warm.

2. Sauté the Veggies:

  • In a large skillet, heat olive oil over medium-high.

  • Add onion and cook 2–3 minutes.

  • Add broccoli and carrots, sauté 5–6 minutes or until just tender.

  • Season with salt, pepper, and lemon juice if desired. Set aside.

3. Cook the Garlic Butter Shrimp:

  • Pat shrimp dry and season with salt, pepper, and optional paprika.

  • In the same skillet, melt butter with olive oil over medium heat.

  • Add garlic and cook for 30 seconds (don’t burn).

  • Add shrimp in a single layer. Cook 1–2 minutes per side until pink and opaque.

  • Squeeze in lemon juice and sprinkle with parsley. Toss to coat.

🍽️ To Serve:

Plate a scoop of mashed potatoes, top with sautéed veggies, and spoon garlic butter shrimp over everything. Drizzle extra garlic butter sauce from the pan over the plate for extra richness.

📝 Tips:

  • Want a kick? Add a pinch of cayenne or red chili flakes to the shrimp.

  • Dairy-free? Sub olive oil and plant-based milk/butter in the mash.

  • Swap shrimp for scallops or chicken if needed.
