🧾 Ingredients (Serves 4):
🍤 For the Garlic Butter Shrimp:

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

4 cloves garlic, minced

1 tbsp olive oil

Juice of 1 lemon

1 tbsp chopped parsley (fresh)

Salt & pepper, to taste

Optional: pinch of red pepper flakes or a dash of paprika
🥦 For the Sautéed Veggies:

1 tbsp olive oil or butter
-
1 cup broccoli florets
-
1 cup carrot slices (or zucchini, bell pepper, etc.)

1/2 small onion, thinly sliced

Salt & pepper, to taste

Optional: a squeeze of lemon or sprinkle of garlic powder
🥔 For the Creamy Mashed Potatoes:

2 lbs Yukon gold or russet potatoes, peeled and cubed
-
1/2 cup heavy cream or plant-based milk
-
1/4 cup butter (or vegan butter)

Salt & pepper, to taste

Optional: 2 cloves roasted garlic or 1/4 cup cream cheese for extra richness
🔪 Instructions:
1. Make the Mashed Potatoes:

Boil potatoes in salted water for 15–20 minutes until fork-tender.

Drain and mash with butter and cream (or milk).

Season with salt, pepper, and optional roasted garlic or cream cheese.

Cover and keep warm.
2. Sauté the Veggies:

In a large skillet, heat olive oil over medium-high.

Add onion and cook 2–3 minutes.

Add broccoli and carrots, sauté 5–6 minutes or until just tender.

Season with salt, pepper, and lemon juice if desired. Set aside.
3. Cook the Garlic Butter Shrimp:

Pat shrimp dry and season with salt, pepper, and optional paprika.

In the same skillet, melt butter with olive oil over medium heat.

Add garlic and cook for 30 seconds (don’t burn).

Add shrimp in a single layer. Cook 1–2 minutes per side until pink and opaque.

Squeeze in lemon juice and sprinkle with parsley. Toss to coat.
🍽️ To Serve:
Plate a scoop of mashed potatoes, top with sautéed veggies, and spoon garlic butter shrimp over everything. Drizzle extra garlic butter sauce from the pan over the plate for extra richness.
