🥩 Garlic Butter Steak Bites

Ingredients:

  • 1½ lbs sirloin steak (or ribeye), cut into 1-inch cubes

  • Salt & black pepper, to taste

  • 1 tablespoon olive oil

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • Optional: chopped fresh parsley or chili flakes for garnish

Instructions:

  1. Prep the steak: Pat the steak dry with paper towels and season generously with salt and pepper.

  2. Sear the steak: Heat olive oil in a large skillet (cast iron works best) over high heat until just smoking. Add steak bites in a single layer (don’t overcrowd — work in batches). Sear for about 1–2 minutes per side until browned. Remove from pan and set aside.

  3. Make garlic butter: Lower heat to medium. In the same pan, melt the butter. Add garlic and cook for about 30 seconds, just until fragrant (don’t let it burn).

  4. Combine: Return steak bites to the pan and toss in the garlic butter for another 30–60 seconds.

  5. Garnish and rest: Sprinkle with chopped parsley or chili flakes. Let rest a few minutes before serving.


🍝 Spicy Cajun Alfredo Twisted Pasta

Ingredients:

  • 8 oz rotini, fusilli, or your favorite twisted pasta

  • 2 tablespoons butter

  • 3 cloves garlic, minced

  • 1 tablespoon Cajun seasoning (or more to taste)

  • 1/2 teaspoon smoked paprika (optional)

  • 1 ½ cups heavy cream (or half-and-half)

  • 3/4 cup grated Parmesan cheese

  • Salt & pepper to taste

  • Optional: red pepper flakes or hot sauce for added heat

Instructions:

  1. Cook pasta: Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain.

  2. Make the sauce: In a large skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds. Stir in Cajun seasoning and paprika.

  3. Add cream: Slowly stir in the heavy cream and bring to a gentle simmer. Cook for 3–5 minutes until it thickens slightly.

  4. Add cheese: Stir in Parmesan cheese until melted and smooth. Adjust salt, pepper, and spice level to your taste.

  5. Toss pasta: Add the cooked pasta to the sauce, tossing to coat. If needed, add a splash of pasta water to loosen the sauce.


🔥 To Serve:

Plate the spicy Cajun Alfredo pasta and top (or serve alongside) the garlic butter steak bites. Drizzle any extra garlic butter from the pan over the pasta for bonus flavor.

  • Sautéed mushrooms or spinach for extra veggies

  • A squeeze of lemon over the steak for brightness

  • Blackened shrimp if you want a surf-and-turf twist
