🧄🧀 Garlic Parmesan Chicken Meatloaf

Ingredients:

  • 1.5 lbs ground chicken

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs (Italian-style or plain)

  • 1/4 cup milk

  • 1 large egg

  • 4 cloves garlic, minced

  • 1/4 cup finely chopped onion

  • 1 tablespoon chopped fresh parsley (or 1 tsp dried)

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon Italian seasoning

  • Optional: 1/4 teaspoon crushed red pepper flakes for heat

Topping (optional but delicious):

  • 2 tablespoons butter, melted

  • 2 tablespoons grated Parmesan

  • 1 teaspoon garlic powder

  • 1 tablespoon chopped parsley (for garnish)


Instructions:

  1. Preheat oven: to 375°F (190°C). Line a baking sheet with parchment or use a loaf pan.

  2. Mix meatloaf: In a large bowl, combine ground chicken, Parmesan, breadcrumbs, milk, egg, garlic, onion, parsley, and seasonings. Mix gently — don’t overwork it.

  3. Shape loaf: Form mixture into a loaf shape on your baking sheet or press into a loaf pan.

  4. Bake: Bake uncovered for 45–55 minutes, or until internal temperature reaches 165°F (74°C).

  5. Optional topping: In the last 5 minutes, brush the top with melted butter, sprinkle with more Parmesan and garlic powder, then return to oven.

  6. Rest & serve: Let rest 5–10 minutes before slicing. Garnish with parsley if you like.


Great with:

  • Roasted green beans or broccoli

  • Mashed cauliflower or potatoes

  • Zoodles or pasta with marinara on the side
