🍝 Garlic Parmesan Chicken Spaghetti with Cajun Three-Cheese Cream Sauce

🧂 Ingredients:

🐔 For the Garlic Parmesan Chicken:

  • 1½ lbs chicken breast or thighs, cut into strips

  • ½ cup grated Parmesan cheese

  • ½ cup all-purpose flour

  • 1 tsp garlic powder

  • 1 tsp Cajun seasoning

  • 1 egg + 2 tbsp milk (for dredging)

  • Salt & pepper to taste

  • 2–3 tbsp oil, for pan frying

🍝 For the Pasta:

  • 12 oz spaghetti or linguine

  • Salted water for boiling

🧄 For the Creamy Cajun Three-Cheese Sauce:

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1½ tsp Cajun seasoning (adjust to spice preference)

  • 1 cup heavy cream

  • ½ cup whole milk (or more cream if preferred)

  • 1 cup shredded mozzarella

  • ½ cup grated Parmesan

  • ½ cup shredded sharp cheddar

  • Salt & pepper, to taste

  • Optional: pinch of paprika or cayenne


👨‍🍳 Instructions:

1. Cook the Pasta:

  • Boil spaghetti in salted water until al dente.

  • Reserve ½ cup pasta water, then drain and set aside.

2. Prep & Cook the Chicken:

  • Mix flour, Parmesan, garlic powder, Cajun seasoning, salt & pepper in a shallow bowl.

  • Beat egg and milk in another bowl.

  • Dredge chicken in egg wash, then coat in Parmesan-flour mix.

  • Pan-fry in oil over medium heat until golden and cooked through (about 4–5 mins per side).

  • Set aside and slice when slightly cooled.

3. Make the Cajun Cream Sauce:

  • In the same pan, melt butter and sauté garlic for 30 seconds.

  • Stir in Cajun seasoning and cook for 30 seconds more.

  • Add heavy cream and milk; stir and simmer for 3–5 minutes.

  • Stir in cheeses until melted and smooth.

  • Season with salt, pepper, and extra Cajun seasoning to taste.

  • Add a splash of reserved pasta water if too thick.

4. Bring It All Together:

  • Toss cooked spaghetti in the creamy sauce until coated.

  • Top with sliced Parmesan chicken.

  • Garnish with fresh parsley, extra Parmesan, and a dash of paprika if desired.


🧄 Optional Add-ins:

  • Sautéed mushrooms or spinach

  • Roasted cherry tomatoes

  • Crumbled bacon or andouille sausage for extra depth

  • A squeeze of lemon for brightness

  • Use half-and-half instead of heavy cream

  • Bake or air fry the chicken instead of pan-frying

  • Use whole-wheat or chickpea pasta
