Instructions

1. Make the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream butter and sugar until fluffy.
  3. Beat in egg yolks (reserve whites) and vanilla.
  4. Mix in melted chocolate.
  5. In a separate bowl, combine flour, baking soda, and salt.
  6. Alternate adding flour mixture and buttermilk to the butter mixture until smooth.
  7. Beat egg whites until stiff peaks form, then gently fold into batter.
  8. Divide batter between pans and bake 30–35 minutes or until a toothpick comes out clean.
  9. Cool completely on wire racks.

2. Make the Coconut-Pecan Frosting

  1. In a saucepan, combine evaporated milk, sugar, egg yolks, and butter.
  2. Cook over medium heat, stirring constantly, until thickened (about 10–12 minutes).
  3. Remove from heat and stir in vanilla, coconut, and pecans.
  4. Let cool slightly before spreading on cake.

3. Assemble the Cake

  1. Place one cake layer on a plate.
  2. Spread a generous layer of coconut-pecan frosting.
  3. Top with second cake layer and frost the top with remaining coconut-pecan mixture.
  4. Optional: drizzle sides with melted chocolate ganache for extra decadence.
