🛒 Ingredients:

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 small shallot, finely chopped

  • 2 cloves garlic, minced

  • 1/2 lb boneless skinless chicken breast or thighs, diced

  • 1/2 lb mushrooms (cremini or wild mix), sliced

  • 1/4 cup white wine (dry, like Sauvignon Blanc)

  • 1/2 cup heavy cream

  • 1/4 cup chicken broth

  • 1 tsp Dijon mustard

  • 1/2 tsp thyme (fresh or dried)

  • Salt and black pepper, to taste

  • 1/2 cup grated Gruyère or Parmesan cheese

  • 1/4 cup breadcrumbs (optional, for topping)

  • Fresh parsley, for garnish

  • Optional: a pinch of nutmeg for depth


👩‍🍳 Instructions:

1. Preheat oven:

To 375°F (190°C). Lightly butter 4 individual ramekins or small oven-safe dishes.

2. Sauté the filling:

In a large skillet, heat butter and olive oil over medium heat.
Add shallots and cook until soft (2-3 min), then add garlic.
Add chicken pieces and cook until no longer pink. Add mushrooms and cook until they release moisture and begin to brown.

3. Deglaze & simmer:

Pour in white wine and cook 1-2 minutes. Stir in cream, chicken broth, mustard, thyme, and a pinch of nutmeg if using.
Simmer gently for 5–6 minutes until slightly thickened. Season with salt and pepper.

4. Assemble the cassolette:

Spoon the mixture into prepared ramekins. Sprinkle cheese on top.
Optional: Add a light layer of breadcrumbs for crunch.

5. Bake:

Place ramekins on a baking sheet and bake for 20–25 minutes until bubbly and golden on top.

6. Garnish & serve:

Sprinkle with fresh parsley and serve hot. Pairs beautifully with crusty bread or a green salad.
