🫓 Grilled Mediterranean Veggie Quesadillas
Loaded with smoky grilled vegetables, melty cheese, and fresh Mediterranean flavor.
🛒 Ingredients (Serves 4)
Vegetables
- 1 zucchini, sliced lengthwise
- 1 red bell pepper, sliced
- ½ red onion, sliced
- 1 cup mushrooms (optional)
- 1 tbsp olive oil
- ½ tsp dried oregano
- Salt & black pepper
For the Quesadillas
- 4 large flour or whole-wheat tortillas
- 1 cup shredded mozzarella
- ½ cup crumbled feta
- 2 tbsp chopped fresh parsley or basil
Optional Add-Ons
- Kalamata olives (chopped)
- Sun-dried tomatoes
- Hummus spread inside the tortilla
- Tzatziki for dipping
👩🍳 Instructions
1️⃣ Grill the Vegetables
- Toss veggies with olive oil, oregano, salt, and pepper.
- Grill over medium heat 3–4 minutes per side until tender and lightly charred.
- Remove and roughly chop.
2️⃣ Assemble
- Lay tortillas flat.
- Sprinkle mozzarella on half of each tortilla.
- Add grilled veggies, feta, herbs, and any optional toppings.
- Fold in half and press gently.
3️⃣ Grill the Quesadillas
- Grill 2–3 minutes per side until crispy and golden.
- Cheese should be fully melted.
(If no grill, cook in a skillet over medium heat.)
4️⃣ Serve
Slice into wedges and serve with:
- Tzatziki
- Hummus
- Fresh cucumber-tomato salad
- A squeeze of lemon
