Hog Pogs

Hog Pogs are a Southern-style party favorite — savory sausage balls wrapped in bacon. Crispy outside, juicy inside 🥓🔥


Hog Pogs Recipe

Ingredients

  • 1 lb breakfast sausage (mild or hot)

  • 2 cups Bisquick (or baking mix)

  • 2 cups shredded cheddar cheese

  • 1 lb bacon, cut in half

  • Optional:

    • 8 oz cream cheese (for extra moisture)

    • ½ tsp garlic powder

    • ½ tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with foil and place a rack on top.

  2. In a bowl, mix sausage, Bisquick, cheese (and cream cheese if using) until well combined.

  3. Roll mixture into 1-inch balls.

  4. Wrap each ball with ½ slice of bacon and secure with a toothpick if needed.

  5. Place seam-side down on the rack.

  6. Bake 35–45 minutes, until bacon is crispy and sausage is fully cooked.

  7. Let rest 5 minutes before serving.


Tips for Best Hog Pogs

  • Use a rack so grease drips away → crispier bacon

  • Par-cook bacon slightly if you like it extra crispy

  • Don’t make balls too big or bacon won’t cook evenly


Variations

  • 🌶️ Add jalapeño or pepper jack cheese

  • 🍯 Brush with maple syrup or BBQ sauce the last 5 minutes

  • 🧀 Stuff with a cube of cheddar or cream cheese


Make Ahead

  • Assemble and refrigerate up to 24 hours

  • Freeze uncooked; bake from frozen (+10 minutes)
