Homemade English Muffin Breakfast Sandwiches are a make-ahead or fresh breakfast dream: toasted English muffins filled with eggs, melty cheese, and your favorite breakfast meat (like sausage, bacon, or ham). They’re easy, customizable, and freezer-friendly — perfect for meal prepping or weekend brunching.


🍳 Homemade English Muffin Breakfast Sandwiches

Make fresh or freeze for grab-and-go mornings


🛒 Ingredients:

Base Ingredients:

  • 4 English muffins, split and toasted

  • 4 large eggs

  • 4 slices cheddar cheese (or your favorite melty cheese)

  • Butter or oil for cooking

Optional Proteins:

  • 4 breakfast sausage patties (store-bought or homemade)

  • OR 4 slices crispy bacon

  • OR 4 slices ham

Optional Add-ons:

  • Spinach, tomatoes, avocado, hot sauce, pesto, etc.


👩‍🍳 Instructions:

1. Cook the Eggs:

You have a few options:

  • Fried eggs: Cook eggs one at a time in a lightly greased skillet until set. You can use a mason jar lid or egg ring to keep them round.

  • Scrambled eggs (folded): Scramble eggs with salt and pepper, cook in a skillet in a flat layer, then cut into squares or fold like an omelet.

  • Oven-baked eggs (great for batch cooking):

    • Preheat oven to 350°F (175°C).

    • Spray a muffin tin with oil and crack 1 egg per cup.

    • Bake for 12–14 minutes for set yolks.

2. Cook the Protein:

  • Sausage: Shape into patties and cook until browned and fully done (internal temp 160°F).

  • Bacon: Pan-fry or bake until crispy, then drain.

  • Ham: Simply warm in a skillet if desired.

3. Toast the Muffins:

  • Lightly butter and toast in a skillet or toaster until golden and crispy.

4. Assemble:

Layer in this order (or however you prefer!):

Bottom muffin → sausage/bacon/ham → egg → cheese → optional toppings → top muffin

5. Serve or Store:

  • Eat fresh or let cool and wrap tightly in foil or parchment for meal prep.


❄️ To Freeze:

  1. Wrap each sandwich in foil or plastic wrap

  2. Place in a zip-top freezer bag

  3. Freeze for up to 2 months

To Reheat from Frozen:

  • Unwrap and microwave on 50% power for 90 seconds, then full power for 30–60 seconds.

  • Or reheat in the oven at 350°F (wrapped in foil) for 15–20 minutes.


🔄 Variations:

  • Use bagels, biscuits, or croissants instead of English muffins

  • Make vegetarian with sautéed veggies and plant-based sausage

  • Swap in flavored cheeses (pepper jack, Swiss, etc.)

  • Add sriracha, hot honey, or garlic aioli for flavor kick
