Homemade KFC-Style Potato Wedges

Ingredients:

  • 4 large russet potatoes

  • 2 tablespoons olive oil (or vegetable oil)

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon cayenne pepper (optional, for a little heat)

  • 1/2 teaspoon sugar (optional, for slight sweetness)


Instructions:

  1. Preheat oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prep potatoes:

  • Wash potatoes thoroughly.

  • Cut each potato into wedges — typically cutting in half lengthwise, then each half into 3-4 wedges depending on size.

  1. Season:

  • In a large bowl, toss the potato wedges with olive oil.

  • In a small bowl, mix all the spices (paprika, garlic powder, onion powder, salt, pepper, thyme, oregano, cayenne, and sugar).

  • Sprinkle the seasoning mix over the potatoes and toss well to coat evenly.

  1. Bake:

  • Arrange the wedges on the baking sheet in a single layer, skin side down if you like extra crispiness on the skin.

  • Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy on the edges and soft inside.

  • Serve hot with your favorite dipping sauces — ranch, ketchup, or even a creamy spicy dip!
