🔸 Ingredients:

2 lbs baby potatoes (red or Yukon gold), halved or quartered

6 slices bacon, chopped

2 tbsp olive oil

2 tbsp honey

1 tsp garlic powder

1 tsp paprika

Salt & black pepper, to taste

Optional: 1 tbsp chopped fresh parsley for garnish

Optional: 1 tsp Dijon mustard for a little tang in the glaze
🔥 Instructions:

Preheat oven to 400°F (200°C).
Line a large baking sheet with parchment paper or foil for easy cleanup. -
Prep the potatoes:

In a large bowl, toss the halved potatoes with olive oil, garlic powder, paprika, salt, and pepper until well coated.

Add bacon:

Spread the seasoned potatoes evenly on the baking sheet.

Scatter chopped bacon over the top.

Roast for 35–45 minutes, stirring halfway through, until potatoes are golden and crispy and bacon is cooked.
