Ingredients

  • 2 lbs (900 g) carrots — peeled and cut into even sticks or use baby carrots

  • 3 tbsp butter, melted

  • 2 tbsp honey

  • 2–3 cloves garlic, minced

  • Salt and black pepper, to taste

  • Optional: fresh thyme, parsley, or a sprinkle of chili flakes for garnish

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

  2. Make the glaze:

    • In a small bowl, whisk together the melted butter, honey, and minced garlic.

  3. Toss the carrots:

    • Place carrots on the baking sheet.

    • Pour the honey–garlic butter over them and toss to coat evenly.

    • Season generously with salt and pepper.

  4. Roast:

    • Spread carrots in a single layer.

    • Roast 20–25 minutes, stirring halfway through, until tender and starting to caramelize.
