🧄 Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts (or thighs)

  • Salt and black pepper, to taste

  • 1 tbsp olive oil

  • 1 tbsp butter

For the Pasta & Sauce:

  • 8 oz penne, fettuccine, or your favorite pasta

  • 3 cloves garlic, minced

  • 1/2 cup sun-dried tomatoes (or cherry tomatoes)

  • 1 1/2 cups heavy cream (or half-and-half)

  • 1/2 cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1/4 tsp crushed red pepper flakes (optional)

  • 2 cups fresh spinach (optional but recommended)

  • Salt & pepper to taste

  • Fresh basil or parsley for garnish


👩‍🍳 Instructions

1. Cook the pasta:

  • Boil water with salt.

  • Cook pasta al dente according to package instructions. Drain and set aside.

2. Prepare the chicken:

  • Season chicken on both sides with Italian seasoning, garlic powder, salt, and pepper.

  • Heat olive oil and butter in a large skillet over medium-high heat.

  • Cook chicken 5–6 minutes per side, or until golden and cooked through.

  • Remove chicken, let rest 5 minutes, then slice into strips.

3. Make the sauce:

  • In the same skillet, lower heat to medium.

  • Add a splash of oil if needed. Sauté garlic for 30 seconds.

  • Add sun-dried tomatoes (or cherry tomatoes) and cook 1–2 minutes.

  • Pour in cream, add Parmesan, Italian seasoning, and red pepper flakes. Stir until cheese is melted and sauce thickens slightly (about 3–5 minutes).

  • Stir in spinach if using and let it wilt.

4. Combine:

  • Add cooked pasta and sliced chicken back into the skillet.

  • Toss until everything is well coated and heated through.

  • Taste and adjust seasoning with salt & pepper.

5. Garnish & Serve:

  • Sprinkle with fresh chopped basil or parsley and extra Parmesan.

  • Serve warm with garlic bread or a simple green salad.

  • Wine: Pinot Grigio or light Chardonnay

  • Side: Garlic bread, roasted vegetables, or Caesar salad
