🧂 Ingredients

For the Steaks:

  • 2 ribeye, sirloin, or filet mignon steaks (about 1–1½ inches thick)

  • Salt and freshly ground black pepper

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, smashed

  • Fresh rosemary or thyme sprigs (optional for basting)

For the Creamy Garlic Sauce:

  • 1 tbsp butter (or use steak drippings)

  • 4–5 garlic cloves, minced

  • ½ cup heavy cream

  • ¼ cup beef broth (or white wine)

  • ¼ cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Fresh parsley (optional, for garnish)


🔥 Instructions

1. Prep the Steaks:

  • Bring steaks to room temperature (let sit out ~20–30 min).

  • Pat dry and season both sides generously with salt and pepper.

2. Sear the Steaks:

  • Heat a cast iron skillet or heavy pan over medium-high heat.

  • Add olive oil. Once hot, add steaks and don’t move them for 2–3 minutes to get a nice crust.

  • Flip, then add 2 tbsp butter, smashed garlic, and herbs to the pan.

  • Spoon the melted butter over the steaks (“baste”) for 1–2 minutes.

⏱️ Cook Times (per side):

  • Rare: ~2 min

  • Medium-Rare: ~3–4 min

  • Medium: ~4–5 min

  • Use a meat thermometer for best results (130°F / 54°C for medium-rare).

  • Remove steaks, tent with foil, and rest for 5–10 minutes.

3. Make the Creamy Garlic Sauce:

  • In the same pan, reduce heat to medium. Wipe out excess grease if needed, but leave browned bits.

  • Add 1 tbsp butter and minced garlic. Sauté for 30–60 seconds until fragrant (don’t brown).

  • Pour in beef broth (or wine) and simmer for 2–3 minutes to reduce.

  • Stir in heavy cream and Parmesan. Simmer until thickened (3–5 minutes).

  • Season with salt and pepper to taste.

4. Serve:

  • Spoon creamy garlic sauce over the rested steaks.

  • Garnish with chopped parsley or extra Parmesan if desired.

  • Roasted veggies

  • Garlic butter green beans

  • Crusty bread to mop up that sauce
