You got it — here’s an easy, no-fuss recipe for Lazy Girl Pecan Pie Bars. All the gooey, nutty, buttery goodness of a classic pecan pie, but way simpler and made in a pan. No rolling out dough, no pie stress — just mix, bake, and devour.


🥧 Lazy Girl Pecan Pie Bars

Ingredients

For the Crust:
  • 1 cup (2 sticks) unsalted butter, melted

  • 2 cups all-purpose flour

  • 1/2 cup brown sugar, packed

  • 1/2 tsp salt

For the Filling:
  • 3 large eggs

  • 1 cup light corn syrup (or maple syrup for a twist)

  • 1 cup brown sugar, packed

  • 2 tbsp melted butter

  • 1 tsp vanilla extract

  • 2 cups chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C).
    Grease or line a 9×13-inch baking dish with parchment paper for easy removal.

  2. Make the crust:

    • In a bowl, mix melted butter, flour, brown sugar, and salt until combined (like a soft dough).

    • Press evenly into the bottom of your prepared pan.

    • Bake for 15–18 minutes, until lightly golden. Set aside to cool slightly.

  3. Make the filling:

    • In a bowl, whisk together eggs, corn syrup, brown sugar, melted butter, and vanilla.

    • Stir in the chopped pecans.

  4. Assemble & bake:

    • Pour the filling over the prebaked crust.

    • Bake for 30–35 minutes, or until the center is just set and no longer jiggles.

  5. Cool completely (this is the hardest part 😅) — then cut into bars.


✅ Lazy Girl Tips:

  • Want less cleanup? Mix everything in one bowl and reuse it for both crust and filling.

  • Make it extra lazy: Use a store-bought shortbread crust or graham cracker crust as a shortcut.

  • Store in the fridge up to 5 days, or freeze individually wrapped bars for up to 2 months.
