🥧 Lazy Girl Pecan Pie Bars
Ingredients
For the Crust:

1 cup (2 sticks) unsalted butter, melted

2 cups all-purpose flour

1/2 cup brown sugar, packed

1/2 tsp salt
For the Filling:

3 large eggs
-
1 cup light corn syrup (or maple syrup for a twist)

1 cup brown sugar, packed
-
2 tbsp melted butter
-
1 tsp vanilla extract
-
2 cups chopped pecans
Instructions

Preheat oven to 350°F (175°C).
Grease or line a 9×13-inch baking dish with parchment paper for easy removal. -
Make the crust:

In a bowl, mix melted butter, flour, brown sugar, and salt until combined (like a soft dough).

Press evenly into the bottom of your prepared pan.

Bake for 15–18 minutes, until lightly golden. Set aside to cool slightly.

Make the filling:

In a bowl, whisk together eggs, corn syrup, brown sugar, melted butter, and vanilla.

Stir in the chopped pecans.

Assemble & bake:

Pour the filling over the prebaked crust.

Bake for 30–35 minutes, or until the center is just set and no longer jiggles.

Cool completely (this is the hardest part 😅) — then cut into bars.

Want less cleanup? Mix everything in one bowl and reuse it for both crust and filling.

Make it extra lazy: Use a store-bought shortbread crust or graham cracker crust as a shortcut.

Store in the fridge up to 5 days, or freeze individually wrapped bars for up to 2 months.
