Serves: 4 | Prep Time: 10 mins | Cook Time: 15–20 mins


🛒 Ingredients:

  • 4 cod fillets (about 6 oz each), skinless

  • 3 tbsp olive oil, divided

  • 2 tbsp lemon juice (fresh)

  • 1 tbsp lemon zest

  • 2–3 cloves garlic, finely minced

  • Salt and black pepper, to taste

  • ¼ cup pine nuts, lightly toasted

  • ¼ cup fresh parsley, finely chopped

  • Optional: 1 tsp paprika or a pinch of chili flakes for heat

  • Lemon wedges, for serving


👩‍🍳 Instructions:

1. Preheat Oven:

Preheat your oven to 400°F (200°C).

2. Make the Marinade:

In a small bowl, whisk together:

  • 2 tbsp olive oil

  • Lemon juice

  • Lemon zest

  • Garlic

  • Salt and pepper

  • Optional: paprika or chili flakes

3. Prepare the Cod:

  • Place cod fillets in a lightly oiled or parchment-lined baking dish.

  • Brush the lemon-garlic marinade generously over each fillet.

  • Let sit for 10 minutes while the oven finishes heating.

4. Bake the Cod:

  • Bake uncovered for 12–15 minutes, or until the cod flakes easily with a fork and is opaque throughout.

5. Toast the Pine Nuts:

While cod is baking, toast pine nuts in a dry skillet over medium heat until lightly golden (2–3 minutes). Stir often — they toast fast.

6. Finish & Serve:

  • Once cod is cooked, drizzle with remaining 1 tbsp olive oil.

  • Sprinkle with toasted pine nuts and fresh parsley.

  • Serve with lemon wedges on the side.
