🧂 Ingredients:

2 medium potatoes, diced (Yukon gold or red potatoes – skin on or off)

1 medium onion, thinly sliced

7 oz turkey or chicken smoked sausage, sliced into coins (lower points than pork versions)

1 tbsp olive oil or use olive oil spray to cut points

Salt and pepper, to taste

½ tsp paprika (optional)
-
¼ tsp garlic powder or minced garlic
-
Fresh parsley, for garnish (optional)
🍳 Instructions:
1. Par-Cook the Potatoes:

Place diced potatoes in a microwave-safe bowl with a splash of water.

Cover and microwave for 3–4 minutes until slightly tender but not mushy. Drain and set aside.
2. Cook the Sausage:

In a large nonstick skillet over medium heat, add a light spray of olive oil.

Add sausage slices and cook until browned (about 3–4 minutes). Remove and set aside.
3. Sauté Onions & Potatoes:

In the same pan, add a bit more oil spray.

Add onions and sauté for 2–3 minutes until softened.

Add the par-cooked potatoes, season with salt, pepper, garlic powder, and paprika.

Cook until golden brown and crispy, about 8–10 minutes, flipping occasionally.
4. Combine & Finish:

Return sausage to the pan and toss everything together.

Cook 2–3 more minutes to heat through and blend flavors.
