Here’s a delicious, family-friendly Mac and Cheese Meatloaf Casserole that combines classic comfort food flavors into one hearty dish. It’s easy, cheesy, and perfect for weeknights.

⭐ What You’ll Need

For the Meatloaf Layer

  • 1 ½ lbs ground beef

  • 1 egg

  • ½ cup breadcrumbs

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ cup milk

  • 2 tbsp Worcestershire sauce

  • ½ cup ketchup (plus extra for topping)

  • 1 tsp salt

  • ½ tsp black pepper

For the Mac and Cheese Layer

  • 8 oz elbow macaroni

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cups milk

  • 2 cups shredded cheddar cheese

  • ½ tsp paprika

  • Salt & pepper to taste

Optional Topping

  • Extra shredded cheese

  • Crispy fried onions or breadcrumbs


🍽️ How to Make It

1️⃣ Prepare the Meatloaf Base

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix: beef, egg, breadcrumbs, onion, garlic, milk, Worcestershire, ketchup, salt, and pepper.

  3. Press the mixture evenly into the bottom of a 9×13 baking dish.

  4. Spread a thin layer of ketchup on top.

  5. Bake 25–30 minutes, or until mostly cooked through.


2️⃣ Make the Mac and Cheese

  1. Cook macaroni according to package directions; drain.

  2. In a pot, melt butter over medium heat.

  3. Stir in flour and whisk for 1 minute to form a roux.

  4. Slowly add milk and whisk until thickened (3–4 minutes).

  5. Add cheddar cheese, paprika, salt, and pepper; stir until smooth.

  6. Mix cheese sauce with cooked macaroni.


3️⃣ Assemble & Bake

  1. Remove meatloaf from oven.

  2. Spread the mac and cheese evenly over the meatloaf.

  3. Top with extra cheese or fried onions if you like.

  4. Bake an additional 10–15 minutes, until bubbly and golden.

  • Roasted broccoli

  • Replace cheddar with Monterey Jack or Colby for a creamier topping.
