🍽️ Meatball Stroganoff with Dreamy Cream Sauce
🕒 Total Time: ~40 minutes
🍴 Serves: 4–6
🛒 Ingredients:
For the Meatballs (or use frozen for a shortcut):
-
1 lb ground beef (or beef + pork mix)
-
1/4 cup breadcrumbs
-
1 egg
-
2 tbsp grated onion (or 1 tsp onion powder)
-
2 cloves garlic, minced
-
Salt & pepper, to taste
-
1 tsp Worcestershire sauce (optional)
For the Dreamy Stroganoff Sauce:
-
2 tbsp butter
-
1 tbsp olive oil
-
1 small onion, finely diced
-
2 cloves garlic, minced
-
8 oz mushrooms, sliced
-
2 tbsp all-purpose flour
-
1 1/2 cups beef broth
-
1/2 cup sour cream
-
1/4 cup heavy cream (or more sour cream)
-
1 tbsp Dijon mustard (optional, for a tangy kick)
-
Salt & pepper, to taste
-
Fresh parsley, for garnish
👩🍳 Instructions:
🔹 Step 1: Make the meatballs
-
Mix all meatball ingredients in a bowl.
-
Roll into 1-inch balls.
-
Brown in a skillet with a bit of oil until golden on all sides (don’t worry if they’re not fully cooked inside — they’ll finish in the sauce).
-
Remove and set aside.
Shortcut: use pre-cooked frozen meatballs and skip this step!
🔹 Step 2: Make the creamy stroganoff sauce
-
In the same pan, melt butter + olive oil over medium heat.
-
Sauté onions for 3–4 minutes until soft.
-
Add garlic and mushrooms; cook until browned and tender (6–8 minutes).
-
Sprinkle in flour, stir, and cook for 1 minute (this thickens the sauce).
-
Gradually whisk in beef broth. Stir well to avoid lumps.
-
Simmer for 2–3 minutes until slightly thickened.
🔹 Step 3: Add the creamy goodness
-
Stir in sour cream, heavy cream, and Dijon mustard.
-
Season with salt and pepper to taste.
-
Return meatballs to the pan, cover, and simmer on low for 10–15 minutes, until meatballs are cooked through and the sauce is creamy and rich.
🍽️ Serve over:
-
Buttered egg noodles (classic!)
-
Mashed potatoes
-
Rice or cauliflower rice
-
Crusty bread to mop up the sauce
🌿 Garnish:
Top with chopped fresh parsley or chives for a fresh finish.
🔄 Variations:
-
Use turkey or chicken meatballs for a lighter version
-
Add a splash of white wine or dry sherry before the broth for depth
-
Make it gluten-free: use GF flour and breadcrumbs
