Here’s a comforting, complete meal: Classic Meatloaf with Mashed Potatoes and Green Beans — hearty, homey, and perfect for any night of the week.


🍽️ Meatloaf with Mashed Potatoes & Green Beans

🧾 Ingredients:

🍖 For the Meatloaf:

  • 2 lbs ground beef (or 1 lb beef + 1 lb pork for extra flavor)

  • 1 cup breadcrumbs (or crushed crackers)

  • 2 large eggs

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1/2 cup milk

  • 1/4 cup ketchup

  • 2 tbsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Optional topping: extra ketchup or BBQ sauce for glaze

🥔 For the Mashed Potatoes:

  • 2 ½ lbs russet or Yukon gold potatoes, peeled and cubed

  • 4 tbsp butter

  • 1/2 to 3/4 cup milk or heavy cream

  • Salt & pepper to taste

🟢 For the Green Beans:

  • 1 lb fresh green beans, trimmed

  • 1 tbsp butter or olive oil

  • Salt, pepper, and optional garlic or lemon zest


🔪 Instructions:

1. Make the Meatloaf:

  • Preheat oven to 375°F (190°C).

  • In a large bowl, combine all meatloaf ingredients. Mix until just combined (don’t overmix).

  • Shape into a loaf and place in a greased loaf pan or on a foil-lined baking sheet.

  • Spread a layer of ketchup or BBQ sauce on top, if desired.

  • Bake for 50–60 minutes, or until internal temp reaches 160°F (71°C).

  • Let rest 10 minutes before slicing.

2. Prepare the Mashed Potatoes:

  • While meatloaf bakes, boil potatoes in salted water until fork-tender (about 15–20 minutes).

  • Drain, return to pot, and mash with butter and milk until smooth and creamy.

  • Season with salt and pepper to taste.

3. Cook the Green Beans:

  • Steam or boil green beans for 4–6 minutes until tender-crisp, or:

  • Sauté in butter or olive oil for 5–7 minutes. Add garlic in the last minute for flavor.

  • Season with salt, pepper, and a squeeze of lemon juice if desired.


🍴 To Serve:

Plate thick slices of meatloaf with a scoop of creamy mashed potatoes and a side of green beans. Top potatoes with a pat of butter or gravy if desired.
