🍋 Mediterranean Chicken Zucchini Bake
Serves: 4–6 | Prep Time: 20 mins | Cook Time: 30–35 mins
🛒 Ingredients:

1 ½ lbs boneless, skinless chicken breasts or thighs, cut into chunks

2 medium zucchini, sliced into half-moons
-
1 red bell pepper, chopped
-
1 small red onion, thinly sliced
-
2–3 cloves garlic, minced
-
1 ½ tsp dried oregano
-
1 tsp thyme (or Italian seasoning)
-
½ tsp crushed red pepper flakes (optional)
-
Juice of 1 lemon
-
3 tbsp olive oil
-
Salt & black pepper to taste
-
½ cup crumbled feta cheese
-
¼ cup Kalamata olives, sliced
-
Fresh parsley or basil for garnish (optional)
👩🍳 Instructions:
1. Preheat Oven

Set oven to 400°F (200°C).
2. Prep the Chicken & Veggies

In a large bowl, combine chicken, zucchini, bell pepper, red onion, and garlic.

Add olive oil, lemon juice, oregano, thyme, red pepper flakes, salt, and pepper.

Toss everything to coat well.
3. Assemble in a Baking Dish

Spread the mixture evenly in a 9×13-inch baking dish.

Bake for 25–30 minutes, or until chicken is cooked through (165°F internal temp) and veggies are tender.
4. Add Toppings & Finish

Sprinkle feta cheese and olives over the top.

Bake another 5 minutes, just to warm the toppings.
5. Garnish & Serve

Top with fresh parsley or basil if desired.
