Mediterranean Chicken Zucchini Bake

You’re in for a flavorful, wholesome dish! A Mediterranean Chicken Zucchini Bake is fresh, light, and packed with vibrant flavors like garlic, lemon, herbs, and feta. It’s perfect for a weeknight dinner or meal prep and naturally low in carbs.


🍋 Mediterranean Chicken Zucchini Bake

Serves: 4–6 | Prep Time: 20 mins | Cook Time: 30–35 mins


🛒 Ingredients:

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into chunks

  • 2 medium zucchini, sliced into half-moons

  • 1 red bell pepper, chopped

  • 1 small red onion, thinly sliced

  • 2–3 cloves garlic, minced

  • 1 ½ tsp dried oregano

  • 1 tsp thyme (or Italian seasoning)

  • ½ tsp crushed red pepper flakes (optional)

  • Juice of 1 lemon

  • 3 tbsp olive oil

  • Salt & black pepper to taste

  • ½ cup crumbled feta cheese

  • ¼ cup Kalamata olives, sliced

  • Fresh parsley or basil for garnish (optional)


👩‍🍳 Instructions:

1. Preheat Oven

  • Set oven to 400°F (200°C).

2. Prep the Chicken & Veggies

  • In a large bowl, combine chicken, zucchini, bell pepper, red onion, and garlic.

  • Add olive oil, lemon juice, oregano, thyme, red pepper flakes, salt, and pepper.

  • Toss everything to coat well.

3. Assemble in a Baking Dish

  • Spread the mixture evenly in a 9×13-inch baking dish.

  • Bake for 25–30 minutes, or until chicken is cooked through (165°F internal temp) and veggies are tender.

4. Add Toppings & Finish

  • Sprinkle feta cheese and olives over the top.

  • Bake another 5 minutes, just to warm the toppings.

5. Garnish & Serve

  • Top with fresh parsley or basil if desired.

  • Serve alone, or with:

    • Rice or couscous

    • Quinoa

    • Warm pita bread

    • A crisp cucumber-tomato salad


🔄 Variations:

  • Add cherry tomatoes for extra juice and sweetness

  • Use eggplant or yellow squash alongside the zucchini

  • Substitute chicken with shrimp, turkey, or make it vegetarian with chickpeas
