🍗 Melt in Your Mouth Chicken

Creamy, tender, and incredibly easy — this baked chicken lives up to its name.

🛒 Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • 1 cup mayonnaise or plain Greek yogurt
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt & black pepper to taste
  • Optional: ½ tsp dried thyme or Italian seasoning

👩‍🍳 Instructions

1️⃣ Preheat

Preheat oven to 375°F (190°C).
Lightly grease a baking dish.

2️⃣ Make the Creamy Topping

In a bowl, mix:

  • Mayo (or Greek yogurt)
  • Parmesan
  • Garlic powder
  • Onion powder
  • Paprika
  • Salt & pepper

3️⃣ Assemble

  • Place chicken in baking dish.
  • Spread mixture evenly over the top of each piece.

4️⃣ Bake

Bake 35–45 minutes, until internal temperature reaches 165°F (74°C).
Top should be golden and slightly bubbly.

Let rest 5 minutes before serving.

💡 Make It Lighter

  • Use plain Greek yogurt instead of mayo (higher protein, lower fat).
  • Use reduced-fat Parmesan.
  • Serve with roasted vegetables or a side salad instead of heavy sides.

🔥 Optional Flavor Variations

  • Add Dijon mustard for tang.
  • Sprinkle with crushed Ritz crackers before baking for a crispy top.
  • Mix in chopped spinach for added nutrients.

If you’d like, I can give you:

  • A low-calorie version
  • A keto version
  • Or a slow-cooker adaptation 😊
