🍰 New York-Style Cheesecake

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tablespoons unsalted butter, melted

Cheesecake Filling

  • 4 (8 oz) cream cheese, softened
  • 1¼ cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

Instructions

1️⃣ Make the crust

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake 10 minutes, then let cool.

2️⃣ Make the filling

  1. In a large bowl, beat cream cheese until smooth.
  2. Add sugar and vanilla, beat until creamy.
  3. Add eggs one at a time, mixing gently.
  4. Fold in sour cream and heavy cream until smooth.

3️⃣ Bake the cheesecake

  1. Pour filling over cooled crust.
  2. Place pan in a water bath (wrap bottom in foil, put in larger pan with hot water).
  3. Bake 60–75 minutes, until edges are set and center slightly jiggles.
  4. Turn off oven, leave cheesecake inside with door slightly open 1 hour.

4️⃣ Chill

  • Remove from oven, let cool to room temperature.
  • Refrigerate at least 4 hours or overnight for best results.
