🫐 One Point Blueberry Muffins (Weight Watchers Friendly)

🛒 Ingredients:

  • 1 ½ cups whole wheat flour

  • 1 cup rolled oats (optional for texture)

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1/3 cup unsweetened applesauce (fat-free)

  • ½ cup nonfat Greek yogurt

  • ⅓ cup honey or maple syrup (or 1/3 cup sugar)

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup fresh or frozen blueberries

  • Optional: zest of 1 lemon for brightness


👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly spray with cooking spray.

  2. In a large bowl, whisk together flour, oats (if using), baking powder, baking soda, and salt.

  3. In another bowl, mix applesauce, Greek yogurt, honey, egg, and vanilla until smooth.

  4. Pour wet ingredients into dry and gently fold together until just combined (don’t overmix).

  5. Gently fold in blueberries (and lemon zest if using).

  6. Divide batter evenly among muffin cups.

  7. Bake 18–22 minutes, or until toothpick inserted comes out clean.

  8. Cool in pan 5 minutes, then transfer to wire rack.


Nutrition (approximate per muffin):

  • Low fat, moderate natural sweetness, and packed with fiber!


Tips:

  • Use fresh blueberries for best texture; frozen works fine but don’t thaw before mixing.
