Peanut Butter Butterscotch Bars

Ingredients

  • ½ cup butter, melted
  • ½ cup creamy peanut butter
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup butterscotch chips
  • Optional: ½ cup chocolate chips or chopped peanuts

Instructions

  1. Prep
  • Preheat oven to 350°F (175°C).
  • Line an 8×8-inch pan with parchment or grease well.
  1. Mix wet ingredients
  • Whisk melted butter, peanut butter, and brown sugar until smooth.
  • Add egg and vanilla; mix well.
  1. Add dry ingredients
  • Stir in flour, baking powder, and salt just until combined.
  1. Fold in chips
  • Gently fold in butterscotch chips (and extras if using).
  1. Bake
  • Spread batter evenly in pan.
  • Bake 22–26 minutes, until edges are golden and center is just set.
  1. Cool & slice
  • Let cool completely before cutting into bars.

Tips for Perfect Bars

  • Slightly underbake for extra chewiness
  • Use creamy peanut butter (natural types can make bars crumbly)
  • Sprinkle flaky sea salt on top for a sweet-salty finish

Storage

  • Keep in an airtight container up to 4 days
