Pecan Pie Cobbler

Pecan Pie Cobbler is a rich, gooey, layered dessert that’s part cobbler, part pecan pie — and 100% irresistible. It’s much easier than making a traditional pie but still delivers that classic Southern flavor: caramelized pecans, buttery crust, and warm syrupy filling. 🥧🍂

📝 Ingredients

Bottom layer:

  • 1/2 cup (1 stick) unsalted butter, melted

Batter layer:

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 3/4 cup milk

  • 1 tsp vanilla extract

Topping:

  • 1 cup light brown sugar, packed

  • 1 1/2 cups pecan halves or chopped pecans

  • 1 1/2 cups hot water


👩‍🍳 Instructions

  1. Prep:

    • Preheat oven to 350°F (175°C).

    • Pour melted butter into the bottom of a 9×13-inch baking dish (don’t stir or spread).

  2. Mix the batter:

    • In a medium bowl, whisk together flour, sugar, baking powder, and salt.

    • Stir in milk and vanilla until just combined.

    • Carefully pour the batter over the butter in the baking dish. Do not stir.

  3. Add topping:

    • Sprinkle brown sugar evenly over the batter.

    • Scatter the pecans on top of the sugar.

    • Slowly pour hot water over the entire dish — don’t stir!

  4. Bake:

    • Bake uncovered for 40–45 minutes, or until the top is golden brown and the edges are bubbling.

    • The middle should be soft and gooey — like pecan pie filling!

  5. Cool slightly:

    • Let it cool for 10–15 minutes before serving. The filling will thicken as it sits.


🍨 Serving Suggestions

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

  • It’s also great cold or reheated the next day!


🔁 Tips & Variations

  • Add a splash of bourbon to the topping for extra depth.

  • Use dark brown sugar for a richer, more molasses-like flavor.

  • Want more crust? Double the batter portion.
