2 tbsp soy sauce (for marinade)
-
1 tbsp cornstarch (for marinade)
-
2 tbsp vegetable oil (for cooking)
-
1 red bell pepper, sliced into thin strips
-
1 green bell pepper, sliced into thin strips
-
1 medium onion, sliced
-
2–3 cloves garlic, minced
-
1-inch piece fresh ginger, grated (or 1 tsp ground ginger)
-
1/4 cup beef broth or water
-
3 tbsp soy sauce (for sauce)
-
1 tbsp oyster sauce (optional)
-
1 tbsp hoisin sauce (optional)
-
1 tsp sugar or honey
-
1 tsp cornstarch (dissolved in 2 tbsp water for slurry)
-
Cooked white rice or noodles, for serving
-
Sliced green onions and sesame seeds (for garnish)
Instructions:
-
Marinate beef:
In a bowl, mix 2 tbsp soy sauce and 1 tbsp cornstarch. Add the sliced beef and toss to coat. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge). -
Prepare sauce:
In a small bowl, mix beef broth, 3 tbsp soy sauce, oyster sauce, hoisin sauce, sugar/honey. -
Cook beef:
Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and stir-fry until browned but not fully cooked through (about 2-3 minutes). Remove beef from skillet and set aside. -
Cook veggies:
Add remaining 1 tbsp oil to the skillet. Stir-fry garlic and ginger for 30 seconds until fragrant. Add onions and bell peppers; cook until just tender-crisp, about 3-4 minutes. -
Combine:
Return beef to skillet. Stir sauce mixture, then add to skillet. Mix well. -
Thicken sauce:
Add the cornstarch slurry and stir until sauce thickens and coats the beef and veggies nicely. -
Serve:
Spoon over steamed rice or noodles. Garnish with sliced green onions and sesame seeds.
Tips:
-
Slice beef thinly and against the grain for tenderness.
-
Use a very hot pan for a good sear.
-
Bell peppers can be swapped for other colorful veggies like snap peas or mushrooms.
