Pepper Steak Stir Fry Meal

Pepper Steak Stir Fry is a classic, flavorful dish that’s quick to prepare and perfect for a wholesome weeknight dinner. Tender strips of beef cooked with crisp bell peppers and onions in a savory, slightly sweet sauce served over rice or noodles.


🥩 Pepper Steak Stir Fry Meal

Ingredients:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain

  • 2 tbsp soy sauce (for marinade)

  • 1 tbsp cornstarch (for marinade)

  • 2 tbsp vegetable oil (for cooking)

  • 1 red bell pepper, sliced into thin strips

  • 1 green bell pepper, sliced into thin strips

  • 1 medium onion, sliced

  • 2–3 cloves garlic, minced

  • 1-inch piece fresh ginger, grated (or 1 tsp ground ginger)

  • 1/4 cup beef broth or water

  • 3 tbsp soy sauce (for sauce)

  • 1 tbsp oyster sauce (optional)

  • 1 tbsp hoisin sauce (optional)

  • 1 tsp sugar or honey

  • 1 tsp cornstarch (dissolved in 2 tbsp water for slurry)

  • Cooked white rice or noodles, for serving

  • Sliced green onions and sesame seeds (for garnish)


Instructions:

  1. Marinate beef:
    In a bowl, mix 2 tbsp soy sauce and 1 tbsp cornstarch. Add the sliced beef and toss to coat. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge).

  2. Prepare sauce:
    In a small bowl, mix beef broth, 3 tbsp soy sauce, oyster sauce, hoisin sauce, sugar/honey.

  3. Cook beef:
    Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and stir-fry until browned but not fully cooked through (about 2-3 minutes). Remove beef from skillet and set aside.

  4. Cook veggies:
    Add remaining 1 tbsp oil to the skillet. Stir-fry garlic and ginger for 30 seconds until fragrant. Add onions and bell peppers; cook until just tender-crisp, about 3-4 minutes.

  5. Combine:
    Return beef to skillet. Stir sauce mixture, then add to skillet. Mix well.

  6. Thicken sauce:
    Add the cornstarch slurry and stir until sauce thickens and coats the beef and veggies nicely.

  7. Serve:
    Spoon over steamed rice or noodles. Garnish with sliced green onions and sesame seeds.


Tips:

  • Slice beef thinly and against the grain for tenderness.

  • Use a very hot pan for a good sear.

  • Bell peppers can be swapped for other colorful veggies like snap peas or mushrooms.
