🍰 Option 1: Baked Mini Cake Doughnuts

🛒 Ingredients:

  • 1 cup all-purpose flour

  • ½ cup granulated sugar

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ½ cup buttermilk (or regular milk with 1 tsp vinegar)

  • 1 large egg

  • 2 tbsp unsalted butter, melted

  • 1 tsp vanilla extract

  • Optional: pinch of nutmeg for that classic doughnut flavor


👩‍🍳 Instructions (Baked):

  1. Preheat oven to 350°F (175°C)

    • Lightly grease a mini doughnut pan.

  2. Mix Dry Ingredients:

    • In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, and nutmeg.

  3. Mix Wet Ingredients:

    • In another bowl, whisk buttermilk, egg, vanilla, and melted butter.

  4. Combine & Fill Pan:

    • Mix wet into dry until just combined (don’t overmix).

    • Spoon or pipe batter into pan, filling each cavity about ¾ full.

  5. Bake:

    • Bake for 8–10 minutes, or until tops spring back when touched.

    • Cool slightly, then transfer to a rack.

  6. Finish:

    • Roll in cinnamon sugar, glaze, dip in chocolate, or dust with powdered sugar.


🍩 Option 2: Fried Mini Yeast Doughnuts (Classic)

🛒 Ingredients:

  • 1 ¼ tsp active dry yeast

  • ¼ cup warm water

  • 2 tbsp granulated sugar

  • ½ cup warm milk

  • 1 tbsp butter, melted

  • 1 egg

  • 2 cups all-purpose flour

  • ½ tsp salt

  • Oil for frying

  1. Activate Yeast:

    • Dissolve yeast in warm water with 1 tbsp sugar. Let sit until foamy (5–10 min).

  2. Make Dough:

    • Mix in milk, butter, egg, remaining sugar, flour, and salt.

    • Knead until smooth (about 5–7 minutes by hand or mixer).

    • Cover and let rise until doubled (about 1 hour).

  3. Shape Doughnuts:

    • Roll out dough to about ½” thick.

    • Cut out mini doughnuts using a small round cutter or mini doughnut cutter.

    • Let rise 15–30 minutes more.

  4. Fry:

    • Heat oil to 350°F (175°C). Fry doughnuts in batches 1–2 minutes per side, until golden.

    • Drain on paper towels.

  5. Finish:

    • Toss in cinnamon sugar, dip in glaze, or top with sprinkles!

  • 1 cup powdered sugar + 1–2 tbsp milk + splash vanilla
