Pineapple Cakes in Round Foil Pans

Ingredients:

  • 1 egg

  • 1 tsp baking powder

Instructions:

  1. Preheat oven: to 350°F (175°C).

  2. Prepare the pans: Lightly grease your round foil pans or line them with parchment paper rounds.

  3. Mix wet ingredients: In a bowl, cream together softened butter and sugar until light and fluffy. Add the egg and vanilla extract; mix well.

  4. Add pineapple: Stir in the crushed pineapple (including a little juice for moisture).

  5. Combine dry ingredients: In another bowl, whisk together flour, baking powder, and salt.

  6. Combine: Gradually add dry ingredients into the wet mixture, alternating with milk. Mix just until combined (don’t overmix).

  7. Fill pans: Spoon batter evenly into the round foil pans, filling about 2/3 full.

  8. Bake: For 20-25 minutes, or until a toothpick inserted in the center comes out clean.

  9. Cool: Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack.


Optional:

  • Top with whipped cream or cream cheese frosting.

  • Add toasted coconut flakes on top for extra flavor and texture.
