🧈 Ingredients:

For the Cake:

  • 1½ cups unsalted butter, softened

  • 1 (8 oz) block cream cheese, softened

  • 3 cups granulated sugar

  • 6 large eggs

  • 3 cups all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • 1 tsp almond extract (optional, but adds great flavor)

  • 1 cup crushed pineapple, drained well

  • Optional: ½ cup sweetened shredded coconut or chopped pecans

For the Glaze (Optional):

  • 1 cup powdered sugar

  • 2–3 tbsp pineapple juice

  • ½ tsp vanilla extract

1. Preheat & Prep Pan:

  • Preheat oven to 325°F (165°C).

  • Grease and flour a bundt pan (or use baking spray with flour).

2. Cream Butter, Cream Cheese & Sugar:

  • In a large bowl, beat butter and cream cheese together until smooth and creamy (about 3–4 minutes).

  • Add sugar gradually and beat until light and fluffy (another 3–5 minutes).

3. Add Eggs:

  • Add eggs one at a time, beating well after each addition.

4. Add Flavors & Pineapple:

  • Mix in vanilla and almond extracts.

  • Fold in drained crushed pineapple (and coconut or nuts if using).

5. Mix Dry Ingredients:

  • In a separate bowl, whisk together flour, baking powder, and salt.

  • Gradually add dry ingredients to the wet batter, mixing until just combined. Don’t overmix.

6. Bake:

  • Pour batter evenly into the prepared bundt pan.

  • Bake for 75–85 minutes, or until a toothpick comes out clean or with moist crumbs (not wet batter).

  • Let cool in the pan for 15–20 minutes, then turn out onto a wire rack to cool completely.

7. Glaze (Optional):

  • Mix powdered sugar with pineapple juice and vanilla until smooth.

  • Drizzle over cooled cake.

  • Drain the pineapple well so your cake doesn’t get soggy.

  • This cake tastes even better the next day — wrap it and let the flavors develop overnight.

  • Serve with whipped cream, vanilla ice cream, or fresh pineapple for an extra treat.
