Pineapple Gelatin Dessert

Here’s a light, tropical, and easy-to-make treat: Pineapple Gelatin Dessert! It’s refreshing, slightly tangy, and perfect for warm weather or as a sweet, fruity finish to any meal. You can keep it simple, or dress it up with cream, coconut, or crushed cookies.


🍍 Pineapple Gelatin Dessert

Serves: 6–8 | Prep Time: 10 minutes (plus chilling)


🛒 Ingredients:

  • 1 (20 oz) can crushed pineapple, undrained

  • 1 package (3 oz) lemon or pineapple-flavored gelatin (Jell-O)

  • 1 cup boiling water

  • 1 cup cold water or pineapple juice (for more flavor)

  • Optional additions:

    • 1 cup mini marshmallows

    • ½ cup whipped topping or cream cheese

    • ½ cup shredded coconut

    • ½ cup chopped pecans or walnuts


👩‍🍳 Instructions:

1. Dissolve the Gelatin:

In a large bowl, pour boiling water over the gelatin powder. Stir for 2 minutes until completely dissolved.

2. Add Liquids and Pineapple:

  • Stir in cold water or pineapple juice.

  • Add the crushed pineapple with its juice. Mix well.

3. Optional Add-Ins (for a fluffier texture):

  • Let mixture cool slightly, then fold in marshmallows, shredded coconut, whipped topping, or cream cheese if using.

4. Chill:

  • Pour into a 9×9-inch dish or individual cups.

  • Chill in the fridge for 4 hours or until firm.

5. Serve:

  • Cut into squares or scoop into bowls.

  • Top with whipped cream and a sprinkle of nuts or coconut, if desired.


🍽️ Variations:

  • Use orange, lime, or coconut gelatin for a flavor twist.

  • Mix in mandarin oranges or diced mango for more tropical flair.

  • Make a layered version with a cream cheese/pineapple base and gelatin on top.
