🍍 Pineapple Pork Chops
Ingredients

4 bone-in or boneless pork chops (about 1 inch thick)

Salt and black pepper, to taste

1–2 Tbsp olive oil or vegetable oil

1 cup pineapple juice (or juice from 1 can of pineapple slices)

1 can (15 oz) pineapple slices (reserve juice if using canned)

¼ cup brown sugar

2 Tbsp soy sauce

1 tsp ground ginger (optional)

2 garlic cloves, minced

1 Tbsp cornstarch (optional, for thickening)

Chopped green onions or cilantro, for garnish
Instructions

Season the pork chops:
Sprinkle both sides with salt and pepper. -
Sear the pork chops:
Heat oil in a large skillet over medium-high heat.
Sear chops for 3–4 minutes per side until golden brown. Remove and set aside. -
Prepare the pineapple sauce:
In the same skillet, combine pineapple juice, brown sugar, soy sauce, garlic, and ginger.
Bring to a simmer. -
Cook the chops in the sauce:
Return the pork chops to the skillet.
Add pineapple slices on top.
Cover and simmer on medium-low heat for 10–15 minutes, or until pork is cooked through (internal temp 145°F / 63°C). -
Optional thickening:

Mix 1 Tbsp cornstarch with 2 Tbsp cold water.
