Here’s a delicious and simple recipe for Pineapple Pork Chops — sweet, tangy, and juicy with a tropical twist. 🍍🥩


🍍 Pineapple Pork Chops

Ingredients

  • 4 bone-in or boneless pork chops (about 1 inch thick)

  • Salt and black pepper, to taste

  • 1–2 Tbsp olive oil or vegetable oil

  • 1 cup pineapple juice (or juice from 1 can of pineapple slices)

  • 1 can (15 oz) pineapple slices (reserve juice if using canned)

  • ¼ cup brown sugar

  • 2 Tbsp soy sauce

  • 1 tsp ground ginger (optional)

  • 2 garlic cloves, minced

  • 1 Tbsp cornstarch (optional, for thickening)

  • Chopped green onions or cilantro, for garnish


Instructions

  1. Season the pork chops:
    Sprinkle both sides with salt and pepper.

  2. Sear the pork chops:
    Heat oil in a large skillet over medium-high heat.
    Sear chops for 3–4 minutes per side until golden brown. Remove and set aside.

  3. Prepare the pineapple sauce:
    In the same skillet, combine pineapple juice, brown sugar, soy sauce, garlic, and ginger.
    Bring to a simmer.

  4. Cook the chops in the sauce:
    Return the pork chops to the skillet.
    Add pineapple slices on top.
    Cover and simmer on medium-low heat for 10–15 minutes, or until pork is cooked through (internal temp 145°F / 63°C).

  5. Optional thickening:

    • Mix 1 Tbsp cornstarch with 2 Tbsp cold water.

    • Stir into the sauce and simmer 1–2 minutes until thickened.

  6. Serve:
    Spoon pineapple sauce and slices over pork chops.
    Garnish with chopped green onions or cilantro.


🍽️ Serving Suggestions

  • Serve with steamed rice or mashed potatoes to soak up the sauce.

  • Add a side of stir-fried vegetables or roasted sweet potatoes.

  • For extra flavor, try grilling the pork chops before adding the sauce.
