Yum, potato pancakes! Here’s a classic recipe for a plate of crispy potato pancakes—perfect for breakfast, brunch, or a tasty side dish.


Classic Potato Pancakes (Latkes)

Ingredients:

  • 4 medium potatoes (Russet or Yukon Gold work well)
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour (or matzo meal)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil or canola oil, for frying
  • Optional: sour cream or applesauce for serving

Instructions:

  1. Grate potatoes and onion: Using a box grater or food processor, grate the potatoes and onion. Place the grated mixture in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This helps get crispy pancakes.
  2. Mix batter: In a large bowl, combine the grated potatoes and onion, eggs, flour, salt, and pepper. Mix well.
  3. Heat oil: In a large skillet, pour about 1/4 inch of oil and heat over medium-high heat until shimmering.
  4. Fry pancakes: Drop spoonfuls of the potato mixture into the hot oil and flatten gently with a spatula. Fry for about 3-4 minutes per side, or until golden brown and crispy.
  5. Drain: Remove pancakes and place on paper towels to drain excess oil.
  6. Serve: Enjoy warm with sour cream or applesauce.
