Ingredients

Pork Chops

  • 4 bone-in or boneless pork chops (¾–1 inch thick)
  • Salt and black pepper, to taste
  • 1 tsp paprika
  • 1 tbsp oil or butter

Scalloped Potatoes

  • 4–5 medium potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1½ cups milk (or half-and-half for richer flavor)
  • Salt and pepper, to taste
  • ½ tsp dried thyme (optional)
  • 1 cup shredded cheddar or Gruyère (optional, traditional scalloped potatoes are cheese-free)

Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Lightly grease a baking dish.

2️⃣ Sear the Pork Chops

  1. Season pork chops with salt, pepper, and paprika.
  2. Heat oil or butter in a skillet over medium-high heat.
  3. Sear chops 2–3 minutes per side until lightly golden (they’ll finish cooking in the oven).
  4. Set aside.

3️⃣ Make the Sauce

  1. In the same pan, melt butter.
  2. Add garlic and onion; sauté until soft.
  3. Stir in flour and cook 1 minute.
  4. Slowly whisk in milk.
  5. Season with salt, pepper, and thyme.
  6. Simmer until slightly thickened.

4️⃣ Assemble

  1. Layer half the potatoes in the baking dish.
  2. Pour half the sauce over potatoes.
  3. Add remaining potatoes and sauce.
  4. Place pork chops on top.
  5. Optional: sprinkle cheese over everything.

5️⃣ Bake

  • Cover with foil and bake 40 minutes.
  • Uncover and bake 20–30 minutes more, until potatoes are tender and chops reach 145°F (63°C) internal temperature.

6️⃣ Rest & Serve

  • Let rest 5 minutes before serving.
  • Spoon sauce over pork chops when serving.
