Roasted Potato Halves
Ingredients:

2 pounds small to medium potatoes (Yukon Gold, red potatoes, or baby potatoes)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary or thyme (or fresh if you have it)

1 teaspoon salt

1/2 teaspoon black pepper

Optional: chopped fresh parsley for garnish
Instructions:

Preheat oven: to 425°F (220°C).

Prep potatoes: Wash potatoes and cut each in half lengthwise.

Season: In a large bowl, toss potato halves with olive oil, garlic, rosemary, salt, and pepper.

Arrange: Place potatoes cut side down on a baking sheet lined with parchment paper or foil.

Roast: Bake for 25-30 minutes, until potatoes are golden brown and crispy on the edges, and tender inside. You can flip halfway if you want both sides crispy.

Garnish: Sprinkle with fresh parsley if desired and serve warm.
