Roasted potato halves are a simple and delicious side! Here’s a straightforward recipe for crispy roasted potato halves with herbs and garlic:


Roasted Potato Halves

Ingredients:

  • 2 pounds small to medium potatoes (Yukon Gold, red potatoes, or baby potatoes)

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 teaspoon dried rosemary or thyme (or fresh if you have it)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • Optional: chopped fresh parsley for garnish


Instructions:

  1. Preheat oven: to 425°F (220°C).

  2. Prep potatoes: Wash potatoes and cut each in half lengthwise.

  3. Season: In a large bowl, toss potato halves with olive oil, garlic, rosemary, salt, and pepper.

  4. Arrange: Place potatoes cut side down on a baking sheet lined with parchment paper or foil.

  5. Roast: Bake for 25-30 minutes, until potatoes are golden brown and crispy on the edges, and tender inside. You can flip halfway if you want both sides crispy.

  6. Garnish: Sprinkle with fresh parsley if desired and serve warm.
