Roasted Potatoes and Onions

Ingredients (Serves 4)

  • 2 lbs potatoes (Yukon Gold or red), cut into chunks
  • 1–2 large onions, thickly sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or thyme (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Soak potatoes in cold water for 20 minutes (optional, helps crisping). Drain and dry well.
  3. Toss potatoes and onions with olive oil, salt, pepper, paprika, garlic powder, and herbs.
  4. Spread in a single layer on a baking sheet (don’t overcrowd).
  5. Roast for 35–45 minutes, flipping once halfway, until golden and crispy.
