Ingredients

  • 1 tsp butter or oil

  • 2–3 tbsp cheese, shredded (cheddar, mozzarella, or your choice)

  • 2–3 slices cooked bacon, ham, or sausage (optional)

  • ¼ cup diced bell peppers, onions, or tomatoes (optional)

  • 1 large tortilla (flour or whole wheat)

  • Optional toppings: salsa, avocado, sour cream, hot sauce


Instructions

1. Prepare the eggs

  • In a bowl, whisk eggs with milk, salt, and pepper until smooth.


2. Cook the omelet

  • Heat butter or oil in a nonstick skillet over medium heat.

  • Pour in eggs and let cook undisturbed for 1–2 minutes until edges start to set.

  • Gently lift edges with a spatula and tilt pan so uncooked egg flows underneath.

  • When mostly set but slightly soft on top, add cheese, cooked meat, and vegetables in a line down the center.


3. Roll the omelet

  • Carefully fold one side of the omelet over the fillings, then the other side, forming a long roll.

  • Slide onto the tortilla and roll it up burrito-style.


4. Serve

  • Serve immediately with salsa, hot sauce, or a dollop of sour cream.

  • Optional: Toast the rolled burrito in a skillet for 1–2 minutes per side for a crispy exterior.
