Sausage and peppers

Here’s a classic, flavorful Sausage and Peppers recipe — easy, hearty, and perfect served on its own, over pasta, or in a crusty roll!


🌭🌶️ Sausage and Peppers

Ingredients

  • 1–1.5 lbs Italian sausage links
    (mild, sweet, or hot — your choice)
  • 2 tbsp olive oil
  • 3 bell peppers, sliced
    (mix of red, yellow, green for best flavor)
  • 1 large onion, sliced
  • 3–4 cloves garlic, minced
  • ½ cup crushed tomatoes or tomato sauce (optional)
  • ½ cup chicken broth or white wine
  • 1 tsp Italian seasoning
  • ½ tsp oregano
  • Salt & pepper, to taste
  • Optional: red pepper flakes, fresh basil

Instructions

1. Brown the sausages

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add sausage links and brown on all sides (about 8–10 minutes).
  • Remove sausages and slice them into rounds (or leave whole). Set aside.

2. Cook the peppers and onions

  • Add the remaining oil.
  • Add sliced peppers and onions.
  • Cook 5–8 minutes until softened and slightly caramelized.
  • Add garlic and cook 1 minute more.

3. Simmer everything together

Add to the pan:

  • Sliced (or whole) sausages
  • Italian seasoning + oregano
  • Chicken broth or wine
  • Crushed tomatoes (if using)

Stir, bring to a simmer, cover, and cook 10–15 minutes until sausages are cooked through and flavors blend.


4. Finish

Taste and adjust salt, pepper, or spices.
Garnish with basil or red pepper flakes if desired.


🍽️ How to Serve

  • On toasted hoagie rolls with melted provolone
  • Over pasta (penne, spaghetti, or rigatoni)
  • With rice or polenta
  • As a low-carb bowl with veggies

  • Sheet-pan version (super easy)
  • Slow cooker version
  • Spicy version with hot cherry peppers
  • With potatoes or mushrooms added
