🦐 Seafood Lovers’ Pasta
Ingredients (serves 4)

8 oz linguine or spaghetti

1 lb shrimp, peeled and deveined

½ lb scallops
-
1 lb mussels, cleaned

1 lb clams, cleaned
-
4 tbsp butter
-
4 cloves garlic, minced
-
½ tsp red pepper flakes (optional)

1 cup cherry tomatoes, halved
-
½ cup white wine (or seafood broth)
-
1 cup fresh parsley, chopped
-
Juice of 1 lemon
-
Salt and pepper to taste

Olive oil
Instructions

Cook pasta:

Cook pasta according to package instructions until al dente. Drain and set aside.

Prepare seafood:

In a large skillet, heat 2 tbsp butter and a drizzle of olive oil over medium heat.

Add garlic and red pepper flakes; sauté until fragrant (about 1 minute).

Add shrimp and scallops; cook 2-3 minutes until they start to turn opaque. Remove and set aside.

Cook mussels and clams:

In the same skillet, add white wine and cherry tomatoes. Bring to a simmer.

Add mussels and clams; cover and cook until shells open (about 5-7 minutes). Discard any unopened shells.

Combine:

Return shrimp and scallops to the skillet.

Add remaining 2 tbsp butter, lemon juice, and chopped parsley. Stir gently.

Toss in cooked pasta and mix to coat well. Season with salt and pepper.

Serve:

Serve immediately with extra parsley and lemon wedges.

Use fresh seafood for best flavor; frozen works too but adjust cooking times.

Swap out pasta for rice or serve with crusty bread to soak up the sauce.
