  • 1 (8 oz) can crushed pineapple, drained well

  • ½ cup sweetened shredded coconut (optional but traditional)

  • 3 tablespoons lemon juice (fresh or bottled)

  • 1 (8 oz) container whipped topping (like Cool Whip), thawed

  • Optional: 1 maraschino cherry per slice, for garnish

  1. Mix the filling:
    In a large bowl, stir together sweetened condensed milk and lemon juice until thickened slightly.
    Fold in drained pineapple, chopped pecans, coconut (if using), and half of the whipped topping.

  2. Assemble the pie:
    Spoon the mixture into the graham cracker crust and spread evenly.

  3. Top and chill:
    Spread the remaining whipped topping over the pie.
    Cover and refrigerate for at least 4 hours, or overnight, until set.

  4. Serve:
    Slice and garnish each piece with a cherry, a sprinkle of pecans, or a bit of shredded coconut.
