Sliced meatloaf is a classic comfort food staple — hearty, flavorful, and perfect for sandwiches or a satisfying meal. Here’s a straightforward recipe for a juicy, tender meatloaf that slices beautifully every time.


🍖🥩 Classic Sliced Meatloaf

Serves: 6–8
Prep Time: 15 min
Cook Time: 55–60 min
Total Time: ~1 hr 15 min


🧂 Ingredients:

  • 2 lbs ground beef (80/20 blend for juiciness)

  • 1 cup breadcrumbs (plain or seasoned)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 eggs

  • ½ cup milk

  • 2 tbsp ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • Optional: 1 tsp dried Italian herbs or parsley

For the Glaze:

  • ⅓ cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp Dijon or yellow mustard


🔪 Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C).

  • Lightly grease or line a loaf pan with parchment paper.

2. Mix Meatloaf:

  • In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and herbs.

  • Mix gently until combined — avoid overmixing to keep the meatloaf tender.

3. Shape & Place:

  • Shape mixture into a loaf and place it in the prepared loaf pan (or form a loaf shape on a baking sheet).

4. Add Glaze:

  • Mix ketchup, brown sugar, and mustard.

  • Spread half of this glaze evenly over the top of the meatloaf.

5. Bake:

  • Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C).

  • About 10 minutes before done, spread the remaining glaze over the top.

6. Rest & Slice:

  • Let the meatloaf rest for 10 minutes before slicing. This helps it hold together when sliced.


🔁 Tips for Perfect Slices:

  • Use a sharp serrated knife and cut with a gentle sawing motion.

  • Cool meatloaf slightly for cleaner slices or refrigerate leftovers before slicing.

  • Serve with mashed potatoes, steamed veggies, or in sandwiches with mustard and pickles.
