🍲 Slow Cooker Cowboy Casserole

Ingredients

(Serves 6–8)

  • 1 lb (450 g) ground beef (or sausage for extra flavor)

  • 1 small onion, diced

  • 3–4 medium potatoes, thinly sliced

  • 1 can (15 oz / 425 g) kidney beans or pinto beans, drained and rinsed

  • 1 can (15 oz / 425 g) corn, drained

  • 1 can (10.5 oz / 295 g) condensed cream of mushroom soup

  • 1 cup (240 ml) milk

  • 1 cup (100 g) shredded cheddar cheese (plus more for topping)

  • 1 can (10 oz / 283 g) diced tomatoes with green chiles (like Rotel)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp chili powder (optional for spice)

  • Salt & black pepper, to taste

  • Chopped green onions or parsley, for garnish


Instructions

1. Brown the beef

  1. In a skillet over medium heat, cook ground beef and onions until browned.

  2. Drain excess grease.

  3. Season with salt, pepper, garlic powder, and smoked paprika.


2. Mix the sauce

In a bowl, whisk together cream of mushroom soup, milk, and diced tomatoes with chiles.


3. Layer in the slow cooker

Spray your slow cooker with cooking spray, then layer as follows:

  1. Half of the sliced potatoes

  2. Half of the beef mixture

  3. Half of the beans and corn

  4. Half of the soup mixture

  5. Sprinkle half the cheese

Then repeat the layers again.


4. Cook

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours,
    until potatoes are tender and everything is bubbly and creamy.


5. Finish

  • Sprinkle with remaining cheese during the last 15 minutes of cooking.

  • Let melt, then garnish with chopped green onions or parsley.


6. Serve

Serve hot and hearty with:

  • A side of crusty bread or biscuits

  • A dollop of sour cream on top

  • Or a fresh salad to balance the richness

  • Substitute tater tots for sliced potatoes if you want a “loaded cowboy tater tot casserole.”

  • Swap ground beef for ground turkey or chopped smoked sausage.
