Slow Cooker Seasoned Chicken, Potatoes and Green Beans

🛒 Ingredients (Serves 4):

  • 4 chicken thighs or breasts (bone-in or boneless)

  • 1½ lbs baby potatoes (halved or quartered if large)

  • 1 lb green beans, trimmed

  • 3 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika (smoked paprika works well)

  • ½ tsp dried thyme

  • ½ tsp rosemary

  • Salt and pepper, to taste

  • Optional: 1–2 cloves garlic, minced

  • Optional: squeeze of lemon juice for serving


👩‍🍳 Instructions:

1. Prepare Chicken & Vegetables:

  • Pat chicken dry. Rub with 1 tbsp olive oil, garlic powder, onion powder, paprika, salt, and pepper.

  • Toss potatoes with remaining olive oil, salt, pepper, and optional herbs.

2. Layer in Slow Cooker:

  • Place potatoes at the bottom of the slow cooker (they take the longest to cook).

  • Add chicken on top of potatoes.

  • You can sprinkle minced garlic over the chicken if desired.

3. Cook:

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fully cooked and potatoes are tender.

4. Add Green Beans:

  • About 30–40 minutes before serving, add green beans on top.

  • Cover and continue cooking until green beans are tender but still bright green.

5. Finish & Serve:

  • Taste and adjust seasoning if needed.

  • Optional: squeeze fresh lemon juice over the top for a fresh zing.


🍽️ Serving Ideas:

  • Serve with fresh bread to soak up the juices.

  • Add a side salad for extra freshness.

  • Drizzle some pan juices or a light gravy over chicken for extra flavor.


🔥 Tips:

  • For even more flavor, sear chicken in a skillet before adding to the slow cooker (optional).

  • Use red potatoes or Yukon gold for creamier texture.

  • You can swap green beans for broccoli or asparagus, adding them at the same time.
