🥩 Smothered Pork Chops

🍽️ Serves: 4

⏱️ Time: 15 min prep • 35–40 min cook

🛒 Ingredients:

  • 4 bone-in pork chops (about 1-inch thick)

  • Salt and pepper, to taste

  • 1/2 cup all-purpose flour (for dredging)

  • 2–3 tbsp vegetable oil or bacon fat

  • 1 large onion, thinly sliced

  • 2 cloves garlic, minced

  • 2 cups chicken broth

  • 1/2 cup milk or heavy cream

  • 1 tsp dried thyme (or 1 tbsp fresh)

  • 1 tbsp Worcestershire sauce (optional)

  • 2 tbsp butter

  • Fresh parsley for garnish (optional)

👩‍🍳 Instructions:

1. Prep pork chops:

  • Season pork chops generously with salt and pepper.

  • Dredge each chop in flour, shaking off the excess.

2. Brown pork chops:

  • Heat oil in a large skillet over medium-high heat.

  • Brown pork chops on both sides until golden (about 3-4 minutes per side). Remove and set aside.

3. Cook onions & garlic:

  • In the same skillet, add butter and sliced onions.

  • Cook, stirring occasionally, until onions are soft and caramelized (about 10 minutes).

  • Add garlic and cook for another minute.

4. Make gravy & simmer chops:

  • Sprinkle a bit more flour (about 1-2 tbsp) over onions, stir to coat and cook 1 minute.

  • Slowly whisk in chicken broth and milk until smooth.

  • Add thyme and Worcestershire sauce, stirring well.

  • Return pork chops to the skillet, nestling them into the gravy.

5. Simmer:

  • Reduce heat to low, cover, and simmer for 20-25 minutes until pork chops are tender and cooked through.

  • Stir gravy occasionally; add more broth or milk if it gets too thick.

6. Serve:

  • Garnish with fresh parsley if desired.

  • Serve pork chops smothered in onion gravy alongside mashed potatoes, rice, or steamed veggies.

💡 Tips:

  • Use bone-in chops for juicier meat.

  • For thicker gravy, mix 1 tsp cornstarch with cold water and add near the end of cooking.

  • Add mushrooms with onions for extra flavor.
