🥩 Smothered Pork Chops
🍽️ Serves: 4
⏱️ Time: 15 min prep • 35–40 min cook
🛒 Ingredients:
-
4 bone-in pork chops (about 1-inch thick)
-
Salt and pepper, to taste
-
1/2 cup all-purpose flour (for dredging)
-
2–3 tbsp vegetable oil or bacon fat
-
1 large onion, thinly sliced
-
2 cloves garlic, minced
-
2 cups chicken broth
-
1/2 cup milk or heavy cream
-
1 tsp dried thyme (or 1 tbsp fresh)
-
1 tbsp Worcestershire sauce (optional)
-
2 tbsp butter
-
Fresh parsley for garnish (optional)
👩🍳 Instructions:
1. Prep pork chops:
-
Season pork chops generously with salt and pepper.
-
Dredge each chop in flour, shaking off the excess.
2. Brown pork chops:
-
Heat oil in a large skillet over medium-high heat.
-
Brown pork chops on both sides until golden (about 3-4 minutes per side). Remove and set aside.
3. Cook onions & garlic:
-
In the same skillet, add butter and sliced onions.
-
Cook, stirring occasionally, until onions are soft and caramelized (about 10 minutes).
-
Add garlic and cook for another minute.
4. Make gravy & simmer chops:
-
Sprinkle a bit more flour (about 1-2 tbsp) over onions, stir to coat and cook 1 minute.
-
Slowly whisk in chicken broth and milk until smooth.
-
Add thyme and Worcestershire sauce, stirring well.
-
Return pork chops to the skillet, nestling them into the gravy.
5. Simmer:
-
Reduce heat to low, cover, and simmer for 20-25 minutes until pork chops are tender and cooked through.
-
Stir gravy occasionally; add more broth or milk if it gets too thick.
6. Serve:
-
Garnish with fresh parsley if desired.
-
Serve pork chops smothered in onion gravy alongside mashed potatoes, rice, or steamed veggies.
💡 Tips:
-
Use bone-in chops for juicier meat.
-
For thicker gravy, mix 1 tsp cornstarch with cold water and add near the end of cooking.
-
Add mushrooms with onions for extra flavor.
